App Categories can be edited from Notices » App Folders screen. Move your mouse to the folder you want to edit and then click the Edit link.

You can also delete folders from this screen.

This will open the editor where you can change the name, add or remove a parent folder, edit the order of the Folder, make it 'Sticky' (stick to the top of the home screen), as well as change the icon and icon colour.
